S/CAPELIN FISH ROE (ORANGE), we also call it masago/ebiko. Capelin are part of the smelt family, so you will sometimes see this on menus called "smelt roe". Masago are smaller and colorful. Masago makes a really great garnish, especially for adding color to rolls, but I generally prefer to eat it in conjunction with something else rather than on its own. You might see some places offering "flying fish eggs" but actually using masago instead.  Eating masago (capelin roe) as a part of a balanced diet can promote overall physical health.
