TOBIKO ORANGE is a variation of flying fish roe that is selected by Kanika due to its great texture and wonderful taste that speaks premium for itself. Tobiko (とびこ) is the Japanese word for flying fish roe. It is most widely known for its use in creating certain types of sushi. The eggs are large, ranging from 0.5 to 0.8 mm. For comparison, tobiko is larger than masago (capelin roe) but smaller than ikura (salmon roe). The natural colour of tobiko is an orangey- red, it’s crunchy and it has a smoky, salty taste. Sometimes restaurants substitute masago eggs (smelt or capelin roe) which are smaller because this is cheaper. It’s not quite as crunchy and doesn’t have quite as much flavour. It’s naturally bright orange colour. Don’t confuse tobiko with ikura either. Ikura is salmon roe. This is larger – bright orange globes.
